Breakfast Protein Loaf Cakes

 

Over the last week I have been gymming before work. As a result I need an on-the-go breakfast that can sit in a Tupperware, full of the essential protein and carbs for refuel. These cakes have been perfect as I can bake them in advance and taste great!

The first was made with a Cacao Nib and Pear flavour, and the second Strawberry and Cacao Cashew Nut.

To make simply use this mix as a base for the ingredients:

  • 1 banana mashed
  • 1 pear mashed or 2tbsp soaked chia seeds
  • 2 scoop whey protein
  • 1 tbsp. micellar protein
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 2 eggs
  • 1 tsp. almond butter

Stir all the above together and then add the flavourings. Berries add a lovely colour or keep it simple with vanilla essence and seeds. Bake in the oven for about half an hour, until the top has browned slightly and firm to touch!

Serve and enjoy, it keeps well in an airtight container for the rest of the week!
