Raw Bounty Bars 

These sweet treats are energy packed, and I prepared for someone taking on a three peaks challenge this weekend. They will keep for a week in a container in the fridge (if you can resist that long?) and I think I will make another batch for myself as pre-workout snacks! 

Recipe:

100g Seeds/Nuts

100d Pitted dates

1tsp Vanilla Extract

1/3 Cup Cacao Powder

4tbps Coconut Oil

Desiccated Coconut

 

Simply blend your choice of nuts/seeds (I used a mix of sunflower seeds and cashews) until they for a crumb like consistency. Then add the dates (if they are hard soak them in warm water for a while first) with 1tsp vanilla extract. Add your cacao powder and coconut oil and keep blending till it gels together. Pat the mix down into a tray (lined with baking paper for ease of serving) and then sprinkle on the coconut and tap it down to stick. Then put in the fridge for 4 hours, or freezer for 2 and they will be ready to eat!
