Blueberry and vanilla protein loaf cake

A protein breakfast loaf is my essential food prep on a Sunday if I have a busy week of work coming up. Perfect for munching after the gym ok your morning commute of with a cup of coffee for elevenses.

This loaf has quite a rich flavour and feel free to switch up the blueberries for any berry/ fruit!

This made enough for a loaf tin (3 breakfasts if you’re a piggy like me!).

Ingredients:

  • 1/4 cup of fresh or frozen blueberries
  • 1 tblsp melted coconut oil
  • 4 eggs
  • 1tsp cacao powder
  • 3/4 cup coconut flour
  • 2 scoops protein powder (55g)
  • 1 heaped tsp xanthan gum
  • 1 cup almond milk

It’s a one bowl recipe! Blend all ingredients until smooth moxture, adjust the amount of milk as some coconut flour I think absorbs more liquid. Then add blueberries and pour into a lined loaf tin.
Bake at 180’C until the top firm (about 30mins).
