A delicious tea time treat, these cookies are rich in protein and perfect with a cup of tea!
Ingredients:
- 3 medjool dates
- 1tblsp crushed walnuts
- 1/4 cup. Coconut flour
- 30g vanilla whey protein
- 1 egg
- 1 tsp xanthan gum
- 1 tblsp milk
To make, firstly blend the dates and walnuts to break them down.
Add them to a bowl with the flour and protein powder. Next, add the egg and then the milk and xanthan gum.
Beat the mix to form a dough and then take a large heaped tablespoon out, roll into a bowl and flatten onto a lined baking tray.
Bake the cookies in the oven for 10-15mins (until top is hardened at 180’c.
Cool on a cooling rack after removing from the oven.
I decided to drizzle with a chocolate sauce (completely optional!):
- 6 squares of dark chocolate melted in a Bain Mariee or in the microwave.
