These vegan crisps I posted on my instagram a few weeks ago have got a lot of people asking for a recipe- so here it is!
- Bag of raw kale
- 250g sunflower seeds
- 2 tsp Tamari paste
- 1 large clove Garlic
- One whole lemon
- 2 tsp Coriander seeds
- Seasoning
- 200g roasted buckwheat
- Warm water
Also required:
- Vitamix or good food processor
- Dehydrator or low temp oven
Wash your kale in cold water and pull the leaves off the thick stalks so that there’s just the fibrous parts left. Dry thouroughly. Place into a big mixing bowl.
In a strong food processer blend the sunflower seeds, tamari, clove of peeled garlic and lemon (if using a vitamix you can just put in a whole lemon with peel and pith removed if not – just the juice!). Blend then add warm water until you get a “mayonnaise” like consistency.
Pour the mayonnaise onto the washed kale bit by bit and massage into the kale leaves (sounds crazy but get stuck in!) until the leaves wilt. Add the buckwheat, coriander and seasoning.
Then when all coated lay out thinly on a baking tray and either put in the oven on a low heat for 4 hours or a dehydrator if you have one.
