It’s been a while since I shared a recipe so here’s my new fave breakfast, make a couple of these in batches and freeze for mornings when you just need to grab something on the go (just put in the toaster!).
Ingredients for one serving:
- 1/2 Cup Eggwhites
- 1/2 Cup Oats
- 1/2 Scoop Protein (12g)
- 1/2 Banana
- 1/4 Tsp Baking powder
- 1/4 Tsp Cinnamon
- 1/8Tsp Ginger
- 1/2 Cup Blueberries
To make blend the banana with egg whites until the banana is mashed. Add all the other ingredients (except the blueberries) and continue blending.
Heat your pancake pan and melt some coconut oil. Pour in small amounts to pancake size and when starting to bubble drop in a few blueberries to each before flipping. Cook until they have browned and plate up!
Top with anything that takes your fancy – I love fresh strawberries!
