The gooiest cacao chip cookie!

These little beauties were a one bowl wonder and tasted incredible! I took to a picnic and they went down a treat!



  • 80g coconut oil
  • 80g almond oil
  • 175g coconut sugar
  • 1 egg beaten
  • 1 tsp sugar free sweetener
  • 200g buckwheat flour (or other flour)
  • 1 tsp baking powder
  • 2 tbsp. cacao nibs


Simply belnd the oil and sugar to form a paste like consistency. Then add the beaten egg and the dry ingredients and beat again. Spoon little balls onto a baking tray (lined with non-stick paper) and bake for 10-15 mins depending on your oven and how gooey you like em!). Cool on the tray to make them harden and then on a cooling tray before serving. Although they also taste great when still warm with some ice cream!
