Raspberry and Coconut cookie

Super simple to wiz up and a delicious tea time treat!


  • 30g coconut oil 
  • 40g nut butter
  • 40g coconut flour 
  • 10g sunflower seeds 
  • 5 raspberries 

Makes 4 cookies (multiply up depending on your level of self control and whether you like a giant cookie).
Put the coconut oil and nut butter in the microwave for 20 seconds until melted. Mix in the remaining ingredients before stirring through the raspberries. Optional sprinkle of bee pollen here. 
Spoon onto a lined baking tray and put in a hot oven (180’C for 8-10minutes).  Take out and leave to stand on the tray for 10mins to harden then let cool on a wire rack.

Serve and enjoy!
