One of my favourite ways to end a dinner with friends is a chocolate truffle and cup of tea/coffee and these truffle energy balls are the perfect accompaniment.
I used Little’s coffee for the flavour and it adds depth and a kick – if you’re planning to serve in the evening I’d reccomend opting for decaf!
Ingredients:
- 60g coconut oil
- Seeds/juice of 1 passion fruit
- 2 tblsp coffee mixed with 4 tblsp hot water
- 70g omega seed mix
- 100g ground almonds
- 70g coconut flour
- 2 tblsp cacao
- 2tblsp honey or date nectar
To make: add all the ingredients into a food processor excluding the coconut flour. Blitz until smooth.
Add the coconut flour slowly until it forms a dough and sticks into a large ball in the processor. Take out the mix and roll small walnut sized chunks. Place on a tray/plate and set in the freezer for 2 hours to set. Store in the fridge until serving!
